Recipe

30ml lime tequila

7.5ml serrano vodka

7.5ml mint vodka

7.5ml mezcal

7.5ml watermelon liqueur

2.5ml fermented strawberry

45ml watermelon juice

41.25ml water

3.75g sugar

0.75g citric acid

0.15g salt

Lime Tequila

Blend 40g of lime peels with 1L of tequila and 12g of ascorbic acid. Strain through a chinois. Mix in 150g of crumbled queso fresco to the tequila and strain through filter, topping off until clear.

Serrano Vodka

Weigh 30g of serrano slices with the seeds and add to 1L of vodka in a vacseal bag.

Sous vide for 90 minutes at 165 degrees Fahrenheit. Transfer to a crushed ice bath for 5 minutes to top the infusing process and to cool the bag to handle safely.

Strain through a filter. If there's too much heat from the serranos, dilute with vodka until desired heat level is reached.

Watermelon Lime Bubbles

Gently mix 200ml water, 200ml watermelon juice, 100ml lime juice, 10g of sugar, and 5g of foam magic until fully incorporated.

Add mix into a deep walled container and add a fish tank bubbler to create large, lacy bubbles. Scoop with a large wide serving spoon onto your cocktail.
