What is a modern cocktail?

The things we’re doing aren’t new — they’re just new to Arizona

We've invested tens of thousands of dollars and hundreds of hours of traveling and learning how we can create nuanced, flavorful cocktails that get to your table as fast as possible.

We use delicate ingredients and interesting flavors that you wouldn’t typically expect to find in a beverage. We don't rely on syrups or citrus in every drink because we want each flavor to shine (and because we want you to wake up with less of a hangover).

We deconstruct the key components of a cocktail and then do our best to get every ingredient clarified and shelf stable. This lets us pre-batch and pre-dilute drinks and hold them at serving temperature to serve fast and consistent cocktails — day in and day out.

How we differ from traditional cocktail bars

Most of the cocktails you’re used to drinking follow fairly standard recipe formats and proportions based on classic cocktail recipes (think: the daisy, daiquiri, old fashioned, martini, flip, and the highball).

Most of these recipes rely heavily on an excess amount of sugar, which means you need to increase the acid content to properly balance the drinks. The problem with this? Many drinks use lemon and lime for balance but don’t necessarily benefit from the flavor — and result in a punch of citrus that can overpower more subtle ingredients in the cocktail.

Not to mention the short shelf life of sugar syrups and citrus, which often results in lots of waste when things spoil or mold.

The classic style of building cocktails also requires antiquated methods of mixing and diluting ingredients such as shaking or stirring — causing your drink to take an excessively long time to hit the table on busy nights. We believe you came here to drink, not sit around waiting to drink.

Not better — just different

We’re pushing the boundaries to offer something new for the cocktail bar experience in Phoenix. We don’t think the traditional way of making drinks is bad, we just love using modern technology, culinary techniques, and knowledge to create crushable cocktails that we love to drink.
