60ml Tanqueray 10 gin

40ml alcohol-removed Xarello wine

14ml Bermutto

6ml Bitter Bianco

4ml Dolin Dry

4ml Fino sherry

0g sugar

0g citric acid

0.13g salt

Alcohol-removed Xarello Wine

In a rotovap, add 2250ml of Xarello wine. Bring the water bath to 30 degrees Celsius. Set the chiller to -10 degrees. Slowly reduce pressure until 30mbar is reached, while slowly increasing rotational speed until 180 rpm is reach.

Reducing pressure and increasing rotational speed is a slow process to prevent the wine from boiling over into the condenser.Once at 30mbar and 180rpm, let the wine go until you recover about 300ml of distillate. Save this for another cocktail.

Turn everything off, and take your N/A wine that was in the original flask and put it into a graduated cylinder. Use ahydrometer to measure the ABV to make sure that it is at 0%.

Lemon Bubbles

Mix 400g cold water, 100g strained and filtered lemon juice, 10g sugar, and 5g of foam magic together in a pitcher. Mix gently to not create unnecessary bubbles.

Put mix into a deep walled container and add a fish tank bubbler to create large, lacy bubbles. Scoop with a large wide serving spoon onto your cocktail.
