Tanqueray Sevilla (the Seville orange-flavored version of the London dry gin) is washed with toasted sesame oil, while shōchū (a Japanese beverage distilled from grain — similar to vodka) is infused with nori.

The yuzu whey is created by combining the citrus juice with hot milk and straining (similar to a milk punch). The resulting whey is tart, tangy, and gives the cocktail a beautiful silky texture.

 
 

15ml sesame Tanqueray Sevilla

45ml nori Shōchū

30ml green apple juice

15ml yuzu whey

45ml water

7.5g sugar

0.75g citric acid

0.0g salt

Sesame Tanqueray Sevilla

Add 20ml of toasted sesame oil to 1L of Tanqueray sevilla. Freeze for 48 hours then strain through filter.

Nori Shōchū

Add 10g of nori to 1L of Shōchū, in a vacuum chamber pull a deep vacuum for 90 seconds then release.

Do this 3 times to get a nicely infused Shōchū without over steeping. Strain through a filter.

Green Apple Juice

Juice apples into a container then add 12g of ascorbic acid and 10ml of pectinex-ultra SPL per liter. Let stand at room temperature for 2 hours, use saran wrap on the juice to limit contact with air.

Distribute into centrifuge jugs and spin at 4200rpm for 20 minutes.Once done spinning, carefully strain through filter.

Yuzu Whey

Heat up 250ml of whole milk to 185 degrees Fahrenheit then add to 750ml of yuzu juice. Let sit at room temperature for 1 hour then refrigerate for 48 hours.

Remove from the fridge and strain through a filter like you would a milk punch. Keep straining until the yuzu comes out a perfectly clear gold color. This will be sour and tangy, and will froth heavily due to the whey that's now mixed in.

Black Sesame Powder

Add whole black sesame to a spice grinder and blitz in 5 little bursts every 45 seconds until powdered.

Do not just hold the grind button and try to grind it all in one shot, the heat will cause the fat in the sesame seeds to clump everything together and you will have black sesame butter instead of powder.
